The truck used by Healthy Yummies is a 1970s Bedford ice cream van named Elvira May. It was named after Nichola’s amazing grandmother. The Healthy Yummies team had been searching online for catering supplies when an advert for an old Bedford ice cream van popped up at a very reasonable price. Nichola was told that it was 'first come first served', so she left at 4am the next morning to pick the van up from Norfolk. It was love at first drive when, during the six hours home at 40mph, Elvira May turned many heads and made many smile. Healthy Yummies sells hand-dived West Bay scallops in the shell with celeriac puree, cured Old Spot bacon and seashore vegetables.
